Chicken, potato and spinach curry

Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 4 skinless chicken breasts, roughly chopped
  • 500g new potatoes, washed and sliced into quarters
  • 4 tbsp mild curry paste
  • 400ml chicken stock
  • 200ml half fat coconut milk
  • Salt and black pepper to taste
  • 225g frozen leaf spinach, thawed and squeezed of excess water
  • Boiled rice or naan bread to serve

Method

1. Heat the oil in a large deep non stick frying pan. Add the onion and cook over a low
heat for 3-4 minutes.

2. Add the chicken, garlic, potatoes, curry paste and cook, stirring, for 3-4 minutes.

3. Add the stock, coconut milk, and seasoning to taste.

4. Bring to the boil, then reduce the heat and simmer for 20-30 minutes, stirring
occasionally.

5. Stir in the spinach and cook for a further 5 minutes. Serve with boiled rice or naan bread.
